Ingredients

Sauce

  • tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp black vinegar
  • ½ tbsp sugar
  • ½ tbsp sambal oelek chili paste
  • ½ tbsp minced garlic
  • ½ tbsp minced ginger

To Serve

  • 1 carrot, spiralized
  • 2 cups snow pea leaves or Chinese greens, stir-fried in olive oil
  • 2 cups red cabbage, thinly sliced
  • 1 cup shelled edamame beans
  • fresh cilantro, chopped
  • sesame seeds
  • extra hoisin sauce

Organic White Jasmine Rice

    Cook rice according to directions on package.

    Combine sauce ingredients in a small bowl.

    Cut tofu into small triangles or cubes and pat dry with paper towel.

    Heat olive oil over medium-high heat, add tofu and cook on each side for 2-3 mins or until golden brown.

    Reduce heat, pour in sauce, and mix everything together until combined.

    Divide rice between 2 bowls, then top with carrots, snow pea leaves (Chinese greens), red cabbage, edamame beans, cilantro, sesame seeds, and drizzle with hoisin sauce (optional).
