Ingredients

  • 1 tbsp coconut oil
  • 1 onion sliced
  • 2 tbsp Thai curry paste
  • 3 tbsp soy sauce
  • 1 tbsp ginger powder
  • 2 tbsp sugar
  • 1 cup cauliflower
  • 1 cup bell pepper, cut into short strips
  • 1 cup green beans, cut diagonally
  • 1 cup Lotus Foods Organic White Jasmine Rice
  • 1 can coconut milk
  • 1 cup water
  • chopped peanuts (optional)

Organic White Jasmine Rice

    Heat coconut oil in a Dutch oven or large skillet over medium-high heat.

    Sauté onion until golden brown then add curry paste, soy sauce, ginger powder and sugar; mix until all ingredients are coated.

    Stir in cauliflower, bell pepper, green beans and rice.

    Pour in coconut milk and water. Mix thoroughly.

    Cover and cook on low for 25-30 mins.

    Uncover and mix. Let cool for 5 mins.

    Optional: top with chopped peanuts before serving.
